The so-called tapioca is made from the tuber of cassava, a shrub plant up to five meters high . The cassava originally comes from South America and the tapioca flour is still used in Brazil for tasty dishes.
The cassava plant is mainly grown in Nigeria, Zaire, Indonesia and Thailand for starch production. The brownish-beet-shaped tuber is best harvested when the leaves of the plant fall off, as the starch content of the tuber is highest at this point. The cassava tuber can be up to one meter long and weigh up to 15 kilos. It is dried and processed into small, white starch balls or flakes.
The flour is used, for example, in the preparation of soups and sauces. The cassava balls are soaked in water and then, like various sauce binders, processed. Soups get a particularly velvety and creamy consistency. In Brazil, tapioca flour is used to make pancakes, which are then refined with butter, coconut milk or cheese.
