The so-called tapioca is made from the tuber of cassava, a shrub plant up to five meters high . The cassava originally comes from South America and the tapioca flour is still used in Brazil for tasty dishes.
The cassava plant is mainly grown in Nigeria, Zaire, Indonesia and Thailand for starch production. The brownish-beet-shaped tuber is best harvested when the leaves of the plant fall off, as the starch content of the tuber is highest at this point.
